Southwest Feta Pasta

Ingredients

  • 24 oz. cherry tomatoes

  • 1 red bell pepper, diced

  • 1/2 red onion diced

  • 1 whole block feta cheese

  • 2 cloves garlic

  • 1 T ground cumin

  • 2 tsp chili flakes

  • 1 tsp dried oregano

  • 1/2 tsp paprika

  • 1 bunch cilantro

  • 1 can black beans

  • 2 large handfuls of baby spinach

  • Avocado, sliced

  • Cotija cheese

  • Salt, pepper, olive oil

  • 1 lb cooked pasta


Method

  1. Preheat oven to 425 F

  2. Place veggies in a large casserole dish with the block of feta in the middle

  3. Sprinkle seasonings over the top

  4. Cover with 2 T olive oil

  5. Bake for 25-30 minutes until tomatoes are golden browned and blistered and cheese is soft.

  6. Stir the roasted mixture together, mashing the cheese. Then add spinach, pasta, beans, and cilantro (saving some cilantro for serving).

  7. Serve pasta topped with blackened chicken, avocado, cotija cheese, and cilantro

Ingredients For chicken

  • 1 T cumin seeds

  • 1 tsp black peppercorns

  • 1 tsp chili flakes

  • 1 tsp smoked paprika

  • 1 tsp sweet paprika

  • 1 tsp cayenne

  • 1 tsp dried oregano

  • 1 tsp garlic powder

  • Salt

  • 4 chicken breasts or thighs

Method

  1. Preheat skillet to medium high heat

  2. Grind cumin seeds, peppercorns, and chili flakes in mortar and pestle or coffee grinder

  3. Add remaining seasonings and mix until combined

  4. Coat chicken with rub and sear in pan with oil for 3-5minutes per side until well browned

  5. Finish in the 425 F oven for 7 minutes, or until 165 F internal temperature
