Vegan Mac n’ Cheese

Ingredients

seasoning powder

  • 4 T nutritional yeast

  • 3 T tapioca starch

  • 1 T cornstarch

  • 2 tsp onion powder

  • 1 tsp garlic powder

  • 1 tsp mustard powder

  • fat pinch of salt

mac

  • 1 lb pasta (elbow, shells, etc.)

  • 2 cups plant milk

  • 1 tsp apple cider vinegar

  • 1 T lemon juice (or about 1/2 a lemon juiced)

  • 3 T margarine or vegan butter


Method

  1. Bring a large pot of water to a boil, and then add your pasta (cook until desired doneness, drain)

  2. Meanwhile. Mix your seasoning powder in the small bowl of a food processor. (this powder will keep in an airtight container up to 6 weeks)

  3. In the same pot you cooked the pasta in, add your milk, apple cider vinegar, and 3 T of powder. Whisk continuously until the sauce begins to thicken. Add your vegan butter and continue whisking until the sauce coats the back of a spoon

  4. Add your cooked noodles, stir in your lemon juice, and serve warm!
