Oven-Fried Chicken Wings with Sticky-Soy Glaze

Recipe

Ingredients

  • 3. lbs chicken wings and drumettes

  • Enough canola oil to just coat the wings

  • Salt & pepper

Method

  1. Preheat oven to 450

  2. Dry your wings: Air dry wings on a rack in the fridge overnight. Then use paper towels to remove all moisture. Any excess moisture (or ice if frozen) will take longer to get your wings crispy. Which means your wings will overcook.

  3. Toss wings with canola oil, salt, and pepper. Lay on a sheet pan.

  4. Bake at 450 for 25 minutes. Then flip and bake another 25-30 min or until crispy and browned

While wings bake, make your sauce.

For soy-glaze

  • 1/2 c soy sauce

  • 2 tsp rice vinegar

  • 1 inch ginger, minced (or ground ginger 1/2 tsp)

  • 2 cloves garlic, minced

  • 1/4 c brown sugar

  • chili flakes


Method

  1. Mix all ingredients together in a small saucepan

  2. Bring to a boil, then simmer for 15 minutes until sauce coats the back of a spoon.

  3. Remove from heat. Sauce will thicken more upon slightly cooling

Toss those crispy boys with the sauce and serve hot! Tell me these don’t rival your favorite local wing spot?
